Ingredients
- 2 tsp. olive oil
- 1 chopped onion
- 1 sliced green pepper
- 1 sliced jalapeno pepper
- 4 tilapia filets
- 1/2 tsp. salt
- 1 tsp. pepper
- 8 corn/flour tortillas
- 1 chopped tomato
- 1 lime (in wedges)
Preparation
- Add olive oil to a skillet over medium heat and cook onions until tender, add peppers and continue cooking until tender. Season tilapia filets with salt and pepper and add to skillet.
- Cook about 3 minutes per side or until the fish starts to flack. Warm tortillas according to the package.
- On each tortilla, serve a half a filet topped with the onion and pepper mix, and tomato. Garnish with a lime wedge. Enjoy!
Microwave: Wrap 4 tortillas at a time in a damp paper towel and place on a microwave safe plate. Microwave for 30-45 seconds. Wrap in a clean, dry kitchen towel to keep warm.
Oven: Preheat your oven to 350 degrees. Wrap 8 tortillas in aluminum foil and heat for 10-15 minutes or until warm.
