Spaghetti noodles with veggies in a bowl

Fresh Veggie Pasta

Serves 6

Ingredients

  • 8 oz. uncooked spaghetti
  • 1 cup broccoli
  • 1 cup green peppers, sliced
  • 1/2 cup onions, sliced thin
  • 1/2 tsp. minced garlic
  • 1 Tbsp. olive oil
  • 1 tsp. basil
  • 1/4 tsp. thyme
  • 1/4 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup cherry tomatoes (or chopped whole tomatoes)
  • 1 cup meatballs (optional)

Preparation

  1. Cook pasta according to package directions, drain.
  2. Cook meatballs (optional) according to directions.
  3. Meanwhile, in a large pan, heat the oil over medium-high heat and sauté the onions for 3-4 minutes until tender, add the garlic and sauté 1 minute.
  4. Stir in the broccoli, tomatoes, green peppers and the seasonings. Cook 8-9 minute until vegetables are tender.
  5. Stir in the pasta and meatballs, heat thru; sprinkle with cheese. Enjoy!
